Who I am

My name is Evette. I am originally from Arkansas. I now live in Raleigh, North Carolina. I am a mother of a beautiful, vivacious, high energy little girl who has transformed my life for the absolute best. Because of her, I have chosen a path of discovery and redefining moments that will greatly enrich our lives. I hope to become an example of good living, kindness, integrity, hope, and maybe one day her hero.

These past few years have been disastrous, hard, disappointing, painful, and destructive; and THEN it became hopeful, cemented with goodness, love, enlighten with kindness, with a new faith-filled mission.

I work in health care; I have been my entire adult life. Trying something new is always fun and scary; however, the excitement is momentous and contagious. I love this industry, the surprises, and the challenges. We change and promote living.

I am a big, big reader, when I have the time. I’ve read everything John Grisham has put his hands on, except the Boone series (I don’t think I can). He is my favorite author, above them all. The Twilight books were my favorite series, and Gone With the Wind was my most daunting and cherish reads. I will read just about anything, except romance (ugh), although I do have a few Nicholas Sparks in my collection. I have well over a 100 books on my e-reader, including 2 I just bought last week. I know that I will get to them eventually.

My most prized possession is my Note 3! I can call for help, read a book, connect with a friend, email, Facebook, and get direction. She’s my bestie. LOLOL

I do not like loss: Loss of life, freedom, choices, or willingness. It’s wasteful, hurtful, and sometimes irreversible.

My motto: Get through life without lying, stealing, or cheating, and I will win and come out on the better end of things!

        Hi Edith,

        As a bariatric patient, food has become a big challenge for me. I am 11 months out from my surgery. Only recently, could I feel hungry pains. When I say recently, it’s been less than a month. I can now eat more food as well. I have my tiny pouch (Gertrude), and as of late, I’ve not made the best decisions. To ensure that I get all of my proteins in, I have increased my protein drinks to 2 a day, which gives me 40 of the 70 grams of protein I need. However, when I am on my best behavior, I eat much of the things you listed.

        I love salmon, which is one my favorite high protein foods, although I still haven’t mastered the cook on it. I love asparagus as a side dish. I use grapeseed oil a lot. I wrap my asparagus in maple or Applewood bacon, after seasoning with my favorite spices; pan sear in oil, and then bake in the oven for about 15 minutes. It’s filling, and the bacon gives me a boost of protein.

        I also love cabbage. I love it boiled down, with a ham hock for seasoning. The healthier way, with the most benefit, I cook differently. I cut up bacon and onions, render down in grapeseed oil, add tri-color cabbage, spices, apple cider vinegar, and a little bit of chicken stock for wetness and flavor. Turn the burner down to low, and let it sweat for 30 minutes, stirring every 10 minutes or so.

        Carbs are not friend. I stay away from mac n cheese, although I really love it. I have an appreciate to rice, but I have to stay away from it now as well. I’ll eat it sometimes, but not often. They both swells, which feels me up so fast. Eating this can mess up my water and protein intake. They fill you up for what feels like forever. It sticks! hahaha My one carb that I don’t eat often, but will not take it off of the menu is spaghetti. I like it boiled down in a chicken soup. I prefer chicken wings or skinless chicken legs. I boil them down, with bouillon cubes, bell pepper, onion, and an assortment of spices. If I want an extra kick of spice, I’ll add some peppers. I let it boil down, not to the point of the meat falling off the bone, but where the water has thicken, then drop my spaghetti in. This is my all time favorite meal. It means so much too me that my nutritionist has agreed to not say anything to me about it. haha I don’t have it often; maybe once a month.
